How to make World Famous Bihari Champaran Handi Mutton - Story and recipe

Champaran Mutton is a traditional Indian dish that is popular in the state of Bihar. The recipe is as follows:

Ingredients:
1 kg mutton
2 cups yogurt
2 onions, finely chopped
4 cloves of garlic, minced
2-inch piece of ginger, minced
2 tomatoes, finely chopped
2-3 green chilies, chopped
1 tsp cumin powder
1 tsp coriander powder
1 tsp red chili powder
1 tsp turmeric powder
1 tsp garam masala powder
Salt to taste
2 tbsp ghee or oil
2 cups water

Directions:
In a large bowl, mix together yogurt, onions, garlic, ginger, tomatoes, green chilies, cumin powder, coriander powder, red chili powder, turmeric powder, garam masala powder and salt.
Marinate the mutton in this mixture for at least 2 hours.
Heat the ghee or oil in a pressure cooker over medium heat.
Add the marinated mutton and sauté for 5-7 minutes.
Add the water and bring to a boil.
Close the pressure cooker and cook for 2-3 whistles.
Once the pressure is released, open the cooker and cook until the mutton is tender and the gravy has thickened.
Serve hot with rice or chapatis.
